Fermented Raspberry Coulis & Champagne

2 punnets raspberries
100g sugar
1 bottle of Sparkling wine
50ml water

Old or over ripe berries are the for this lightly fermented drink. Simply crush the berries with the sugar. Place in a steralised jar with a napkin and rubber band on top and leave in a warm place for two days. The napkin will let the raspberries breath and keep bugs out. It will bubble away as it ferments. Once ready pass it through a fine sieve to remove the seeds. Add about 30ml to a glass of you favourite sparkling wine.
